Hawaiian Omelet

I saw this recipe while surfing the web the other day, and since Stacie’s out of town I figured I’d give it a shot. 

If we don’t count the one that started with nine different vegetables and looked like a royal pain in the nether regions to make, there were several versions online with the major differences being whether to use pineapple chunks or pineapple salsa, or Canadian bacon vs. Spam.  Since I didn’t really want to open a can of pineapple chunks (running to the store for a fresh pineapple isn’t an option right now because of my foot), had some peach & pineapple chipotle salsa and some leftover Spam from the sandwiches I made yesterday handy, and like salsa on my eggs anyway, the choice was obvious. 

  • 3 large eggs
  • 1 slice Spam (1/8 can)
  • 2 slices cheese
  • 2 tablespoons pineapple salsa

Dice your Spam into tiny pieces and fry up in some butter or oil.  Set aside, leaving the melted butter or oil in the pan.  Scramble three eggs and fry into a disc in said oil residue.  After flipping it, throw your cheese and Spam on the disc and wait for the cheese to melt.  Fold over, plate up, put the salsa on top, and enjoy.  This would also work as a scramble, which I almost did because I was tired. 

It ends up being about 600 calories, with 6 1/2 grams of carbohydrate (4 of which is from the salsa), and 35 grams of protein.  OK, the calorie count is kind of high, but you can’t beat the carbs and protein.  I’m not going to recommend you eat this every day, but if you’re on a low-carb, high-protein diet (like I am), it’s a solid – if occasional – addition to your cookbook.
