Someone posted this picture in a food group I’m in, and all I can say is Madre de Elvis.
Difficulty: I am diabetic, and thus on a carb controlled diet. When I met with the dietitian I was told my carb budget is 45-75g at a meal, and 0-30g at a snack. They assumed 3 meals and 2-3 snacks a day.
That platter was confirmed to be rice, sausage, Spam, and aigs. If we use a cup of rice, that’s at the low end of my carb budget for a meal (45g for the rice, everything else is effectively free).
That Big Spam I’d skip the middle bread on, and it would be below my minimum for a meal; basic store-brand hamburger buns are around 20g each. The rest of the ingredients are negligible. So two sandwiches and plenty of room to spare.
For the SpamGriddle I’d have to go with a bun or English Muffin (that syrup-impregnated pancake bun is ridiculously high carb). The English muffins we usually buy are 25g each, and as with the Big Spam, everything else is negligible. So again, two make a meal at the low end of carbs.
Any of these options leave me with plenty of room for a big glass of milk on the side.
And all of them are pretty cheap. Even if we didn’t keep most of the ingredients around anyway, none of them will break the bank. The only ones we don’t usually have on hand are hamburger buns and sausage patties (which we can always replace with bratwurst or more Spam). Worst case, one of these meals if prepared for Mama and I (Stacie hates Spam) will use a whole can of Spam. So three bucks there, and everything else is even cheaper unless we use some of exotic imported cheese Stacie buys.
